Fruit And Vanilla Bliss Balls Recipe

Bliss balls are a superb choice for an afternoon pick-me-up or after dinner sweet treat. Full of fibre, minerals and vitamins and these bite-size morsels are a good way of incorporating seeds and nuts into your diet.

Freeze them for longer storage and enjoy them straight from the freezer.


Makes: 25

Ingredients:
1 cup dried apple slices, the softer style
10 large mejdool dates, stones removed
1 cup raw almonds
1 cup toasted walnuts, very fresh
½ cup raisins
6 dried apricots, preferably New Zealand apricots
½ tsp vanilla, ground powder, or remove the seeds from 1 vanilla bean
1 serving coconut threads, for rolling

Method:

  1. Place apple slices in a small bowl and cover with warm water. Leave to soak and soften for 10 minutes.
  2. Place remaining ingredients, except coconut, in the food processor. Drain and discard any liquid from soaking apple slices and place them in the food processor with other ingredients. Process until just beginning to come together, leaving some texture in the fruit and nuts.
  3. Roll mixture into even-sized balls and roll in the coconut thread to coat. Keep in an airtight container in the fridge.
