Rose and Pomegranate Granita

Forget traditional roses for Valentines Day, and serve up this icy treat instead! Sweet, tart, and brilliantly purple, this icy treat is delicious served plain or with a spoonful of unsweetened whipped cream. Rose water can be found at major supermarkets - or you could try making your own!

Serves: 4

1 1/2 cups pomegranate juice
1/4 cup sugar
1 teaspoon rose water
Juice and zest of 1/2 lemon

Combine juice and sugar in a small saucepan over low heat. Stir until sugar dissolves; remove from stove.

Stir in the rose water and lemon juice and let cool.

Pour the mixture into 9 x 9 pan and place in the freezer. Freeze until firm, about 3 hours, scraping the surface with a fork every 30 minutes to create a flaky texture.

Serve immediately.
