Forget French toast! This quick and easy French crumpets and bacon recipe is heaven on a plate

You've tried French toast, but now it's time for French crumpets!

This simple breakfast will become one of your favourites in no time. It really is heaven on a plate.

Try Jamie Oliver's idea of adding some finely chopped chilli to the egg mixture or sprinkling over the top – delicious.

Serves: 2
Prep time: 5 mins
Cooking time: 10 mins

Ingredients:
2 large free-range eggs
Sea salt
Freshly ground black pepper
6 rashers smoked bacon
Olive oil
4 crumpets
Maple syrup to serve

Method:

  • Lightly whisk the eggs with a small pinch of salt and pepper in a bowl. Add the crumpets and really push them into the mix, turning a few times to coat. Set aside.

  • Heat the oil over medium heat in a large frying pan and add the streaky bacon. Leave for a few minutes on each side until crisp.

  • Push the bacon to one side and tilt the pan so the fat runs into the middle. Add the crumpets to the pan and fry them for a few minutes on each side until golden.

  • Serve the crumpets topped with the bacon rashers and drizzle over the maple syrup.

Tip:
Leave the crumpets to soak up the egg mix overnight in the fridge.
