Ingredients

For the Base:

  • 225g butter, softened
  • 120g sugar
  • 320g flour

For the Raspberry Filling:

  • 230g frozen raspberries
  • 150g raspberry jam
  • 60g sugar
  • 3 tbsp cornflour
  • 1/2 tbsp lemon juice

Method:

  • Preheat your oven to 190°C (170°C fan).
  • In a bowl, combine the butter, sugar and flour and mix until a crumbly dough forms.
  • Combine the dough into a ball, setting half aside for later. Press the other half of the dough evenly into the bottom of your baking tin.
  • Bake the base for 15 minutes, then remove from the oven and allow it to cool for around 15 minutes.
  • While the base is cooling, combine the frozen raspberries, raspberry jam, granulated sugar, cornflour, and lemon juice in a bowl.
  • Once combined, spread out evenly into your cooled base and sprinkle remaining dough on top.
  • Bake for an additional 35 minutes until the top is golden and the filling is set.
  • Allow the bars to cool completely in the tin before cutting them into squares.
  • Enjoy!
