Toni Street's Baked Chicken Meatballs are the perfect go-to dinner recipe

These chicken meatballs are juicy on the inside, bursting with savoury flavour, and oven-baked so they hold their shape nicely! (Plus, baking them is way easier than pan frying!)

Pair them with a plate of spaghetti or our 'Marry Me Meatball' sauce for the perfect dinner!

Ingredients:

Meatballs:

5 rashers of bacon
1/4 small white onion
1 large garlic clove, minced
1 tsp finely chopped coriander or parsley
500g chicken mince
1/2 cup panko breadcrumbs
1/3 cup grated parmesan
1 egg
2 TBSP sweet Thai chili sauce
1/4 tsp salt
1/2 tsp pepper

Sauce:

5 TBSP butter
4 cloves garlic, minced
2 tsp Italian seasoning
1/4-1/2 tsp red pepper flakes, add to your liking
1 cup sundried tomatoes in oil, roughly chopped
1/4 cup white cooking wine
1 1/2 cups low-sodium chicken broth
1 cup heavy cream
2/3 cup grated Parmesan cheese

 

Method:

For the Meatballs:

  • Preheat oven to 200C or 180C fan forced.
  • Heat a small frying pan over medium heat and add the bacon and onion. Cook for 5 minutes until the onion is soft.
  • Stir in the garlic and coriander and cook for a further 2 minutes, stirring continuously. Set aside to cool.
  • Mix the remaining ingredients with the cooled bacon mixture and season with salt and freshly ground black pepper.
  • Scoop up heaped tablespoons of the mixture and roll into balls, then place in an oven dish. Repeat with remaining mixture - should make 25 - 30. (Tip: spray hands with oil or wet lightly with water.)
  • Bake for 25 minutes until golden brown.

For the Sauce:

  • In a large oven-proof deep skillet, melt butter over medium heat.
  • Add the garlic, Italian seasoning, red pepper flakes and sundried tomatoes and cook over medium heat, stirring often for 2 minutes.
  • Add the wine and cook for 2-3 minutes until mostly cooked down.
  • Add the chicken broth, heavy cream and Parmesan and whisk until well combined. Continue to cook until sauce starts to thicken slightly, stirring occasionally.
  • Add the cooked meatballs to the sauce and mix until the meatballs are well coated.
  • Transfer the skillet to the oven and cook for about 10 minutes until the meatballs are heated through and the sauce is bubbly. Serve immediately.
